Ingredients:
- 1/2 cup popcorn kernels
- 1 cup unsalted peanuts
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup corn syrup
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
Instructions:
Pop the popcorn kernels using your preferred method and place them in a large bowl
Mix in the unsalted peanuts
In a saucepan, melt the unsalted butter over medium heat
Add the brown sugar, corn syrup, and salt to the melted butter
Stir continuously until the mixture comes to a boil
Once boiling, let the mixture cook without stirring for 4-5 minutes or until it reaches the soft ball stage around 235F/118C on a candy thermometer
Remove the saucepan from heat and carefully stir in the baking soda
The mixture will foam up
Pour the hot butterscotch mixture over the popcorn and peanuts, stirring quickly to coat them evenly
Spread the coated popcorn and peanuts onto a baking sheet lined with parchment paper, breaking up any large clumps
Allow the popcorn to cool and the coating to harden before serving
