Ingredients:
- 6 fresh peaches, peeled, pitted, and chopped
- 1 red onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 cup white vinegar
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup raisins
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon red pepper flakes adjust to taste
- Salt and black pepper to taste
Instructions:
In a large saucepan, combine the chopped peaches, red onion, and red bell pepper
Add the white vinegar, granulated sugar, and brown sugar to the saucepan
Stir in the raisins, minced garlic, grated ginger, ground cinnamon, ground cloves, and red pepper flakes
Season the mixture with salt and black pepper to taste
Stir well
Place the saucepan over medium-high heat and bring the mixture to a boil
Reduce the heat to low and let the chutney simmer for about 45-50 minutes, or until it thickens and the peaches are soft
Stir occasionally
Remove the chutney from heat and let it cool to room temperature
It will continue to thicken as it cools
Transfer the fresh peach chutney to clean, sterilized jars
Seal tightly
Store the chutney in the refrigerator for up to several weeks
Serve the fresh peach chutney as a condiment or accompaniment to various dishes
