Low Carb Slow Cooker Broccoli Cheese Soup

Enjoy a bowl of creamy, comforting low-carb broccoli cheese soup thats easy to make in the slow cooker. This soup is the perfect comfort food for any event because it is full of healthy ingredients and delicious flavors.

Ingredients:

  • 4 cups chopped broccoli florets
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

Instructions:

Put chopped broccoli, diced onion, minced garlic, and chicken broth in a slow cooker

For 6 to 8 hours on low heat or 3 to 4 hours on high, until the broccoli is soft

Blend the soup until its smooth with an immersion blender

Fat free cheddar cheese, nutmeg, salt, and pepper should all be added and mixed in

Keep cooking on low for another 30 minutes, or until the soup is creamy and the cheese is melted
