Ingredients:
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 1/4 cup molasses
- 1 large egg
Instructions:
In a bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg
In a separate large bowl, cream the butter and brown sugar until light and fluffy
Beat in the molasses and egg until well combined
Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together
Divide the dough into two equal portions, flatten each into a disk, and wrap in plastic wrap
Chill the dough in the refrigerator for at least 1 hour
Preheat the oven to 350F 175C and line baking sheets with parchment paper
On a floured surface, roll out one portion of the dough to about 1/4-inch thickness
Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets
Gather the scraps, reroll, and cut out more cookies
Bake the cookies for 8-10 minutes, or until the edges are lightly golden
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
Repeat the rolling, cutting, and baking process with the remaining dough
Once the cookies are completely cool, you can decorate them with icing or enjoy them as they are
