Browned Butter Raspberry Pie Blondies

Browned Butter Raspberry Pie Blondies are a delicious take on regular blondies. They have the rich flavor of browned butter, bursts of fresh raspberries, and crunchy pecans, if you want them. They are simple to make and taste great when youre craving something sweet.

Ingredients:

  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh raspberries
  • 1/2 cup chopped pecans optional

Instructions:

Warm the oven up to 175F 350C

Cover a 9x13-inch baking pan with parchment paper, leaving extra on the sides to make it easy to take off

Melt the butter over medium-low heat in a medium-sized saucepan

For another 5 to 7 minutes, stirring often, keep cooking until the butter turns golden brown and smells nutty

Watch out not to burn it

Take it off the heat and let it cool down a bit

Whisk the eggs, vanilla extract, brown sugar, and granulated sugar together in a large bowl until everything is well mixed

Slowly add the cooled browned butter while whisking all the time until it is fully mixed in

To the wet ingredients, add the flour, baking powder, and salt

Mix just until everything is mixed together

Be careful not to mix too much

Add the raspberries and chopped pecans slowly, if using, until they are spread out evenly in the batter

When the baking pan is ready, pour the batter in and spread it out evenly

Before you put it in the oven, heat it up

Bake it for 25 to 30 minutes, or until the edges are golden brown and a toothpick stuck in the middle comes out clean or with a few wet crumbs on it

After taking the blondies out of the oven, let them cool all the way down on a wire rack in the pan

If the blondies get too hot, use the extra parchment paper to lift them out of the pan and place them on a cutting board

Serve it cut up into squares
