Ingredients:
- 1 cup dry green lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp thyme
- Salt and pepper to taste
- 4 cups spinach or kale, chopped
- 6 cups water
Instructions:
Put lentils in the slow cooker after washing them
Put in the diced tomatoes, cumin, paprika, thyme, salt, and pepper, along with the vegetable broth
Let it cook on low for 6 to 8 hours, or until the lentils are soft
Add chopped spinach or kale in the last 30 minutes of cooking
If you need to, adjust the seasoning and ladle the soup into bowls before serving
