Gluten-Free Maple Pumpkin Oatmeal Breakfast Bars

For a quick and healthy breakfast on the go, these gluten-free Maple Pumpkin Oatmeal Breakfast Bars are great. They are a tasty way to start the day because they are full of healthy things like oats, pumpkin, and almond butter, and they are sweetened with pure maple syrup.

Ingredients:

  • 2 cups gluten-free rolled oats
  • 1/4 cup almond flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup pumpkin puree
  • 1/4 cup pure maple syrup
  • 1/4 cup almond butter
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pecans or walnuts optional

Instructions:

Warm the oven up to 175F 350C

A 8x8-inch baking dish should be greased

Cinnamon, ginger, nutmeg, oats, and salt should all be mixed together in a large bowl

Mix pumpkin puree, maple syrup, almond butter, egg, and vanilla extract in a different bowl using a whisk until the mixture is smooth

Add the wet ingredients to the dry ones and mix them together until everything is well mixed

If you want to, fold in the chopped nuts

Fill the baking dish with the mixture and press it down evenly

When the edges are golden brown, its done baking

Let the bars cool down all the way before cutting them into bars

Put leftovers in the fridge in a container that wont let air in
