This Creamy White Chicken Chili is a comforting and satisfying meal perfect for chilly days. The slow cooker does all the work, melding the flavors together beautifully for a creamy and flavorful dish.
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into small pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 1 can diced green chilies
- 4 cups chicken broth
- 1 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp chili powder
- Salt and pepper to taste
- 1 cup frozen corn kernels
- 1/2 cup heavy cream
- 1/4 cup chopped fresh cilantro optional, for garnish
Instructions:
Put chicken, onion, garlic, green chilies, white beans, chicken broth, cumin, oregano, chili powder, salt, and pepper in a slow cooker
Put a lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is done and the flavors blend
Mix in the heavy cream and frozen corn about 30 minutes before giving it away
Keep cooking with the lid on until everything is hot
If you want, you can serve it hot with chopped fresh cilantro on top
