Tempe Korean Girls

Brandy snaps are thin and crispy cookies filled with creamy whipped cream and flavored with a delightful hint of brandy. They are a sophisticated and delectable treat for any occasion.

Ingredients:

  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup golden syrup
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon ground ginger
  • 1 teaspoon brandy
  • Whipped cream, for filling

Instructions:

Preheat your oven to 350F 175C

In a saucepan over low heat, melt the butter, brown sugar, and golden syrup together, stirring until smooth

Remove the saucepan from heat and let it cool slightly

Sift the flour and ground ginger into the butter mixture

Add the brandy and mix until well combined

Line a baking sheet with parchment paper

Drop small spoonfuls of the mixture onto the prepared baking sheet, leaving plenty of space between them as they will spread during baking

Bake in the preheated oven for about 6-8 minutes or until the cookies are golden brown and lacy

Remove from the oven and let the cookies sit on the baking sheet for about 1-2 minutes to firm up slightly

Working quickly, use a spatula to carefully lift each cookie and roll it around the handle of a wooden spoon to create a tube shape

Hold for a few seconds until the cookie sets in shape

Transfer the shaped cookies to a wire rack to cool completely

Once the cookies are cooled, fill them with whipped cream just before serving

Enjoy these delightful brandy snap cookies
